Research Progress of Exploitation and Utilization of Jerusalem artichoke Resources

On the basis of elaborating the value of Jerusalem artichoke and the properties of inulin,the research situation of inulin extraction methods and Jerusalem artichoke products was summarized in this paper.Meanwhile,some suggestions were put forward for the present problems and developing direction in exploitation and utilization of Jerusalem artichoke.
