The changes of physiology and biochemistry in spinach during post-harvest

CHEN Xiang-ming (Department of Biochemistry,Hefei Education College,Hefei 230001,China)  
During the preservation of spinach, the RWC content, chl and soluable protein content reduce; protective enzyme increases at first, then reduces; MDA, proline content and membrane permeability increase in different levels in the later period. It shows that the loss of water in spinach leaves ,the abnormal metabolism of activate oxygen in cell ,higher lipid peroxidation ,destruction of membrane structure accelerates the senescence of spinach leaves.
