Trypsin Extraction Process Optimization of Gelatin in Pigskin

The method of adding trypsin, using dried pigskin as raw material, extraction gelatin. The amount of trypsin,enzymatic hydrolysis time, enzymatic hydrolysis temperature and sol temperature were changed to extract gelatin from dried pig skin, and the obtained solution was tested in ultraviolet light. The yield of gelatin was calculated according to the standard curve method. The process for preparation of gelatin with pepsase was studied, and parameters of the process were optimized.The enzymolysis were conducted at pH of 2 to 3 for 12 hours, and the dosage of trypsin was 3%. The temperature was 35℃,the sol temperature was 80℃. Under this condition, the yield of gelatin reached 67.28%, which indicated the method practical and effective.
