Optimization of extracting ethanol-soluble active substance from natural se-enriched green tea

Ethanol-soluble active substance from natural Se-enriched green tea were extracted with the aid of ultrasonic wave and the extraction conditions were optimized by single factor and orthogonal experiments.The results showed that the optimal extraction condition are: 50% ethanol,solid to liquid ratio 1∶25,temperute 60 ℃,extraction time 2 h and power of ultrasonic 400 w.The yield was 44.44%.The active substance under the optimized technic condition contained Selenium 1.03 μg/g,polyphenol 24.41%,protein 31.09%and polysaccharide 13.56%.
