Study of Lipidase Production with Liquid Culture in Monascus Anka

Tang Bin Zhang Qinqing (Anhui Institute of Mechanical and Electrical Engineering Wuhu 241000)  
In the process of the lipidase production using liquid ulture of monascus anka, the consistences of carbon source and nitrogen source are 6~8% and 4% respectiely. The fermentation temperation is 35 ℃, and PH value is 4.5. After a fermentation for 42~48 hours, the activity of lipidase may reach 350 μ/ml.
