Study on Processing of natural wild vegetable

Li Yu-qing,Zhao Tong-ling*(Department of Chemistry and Biology,Xiangfan Universty,Hubei 441053)  
The Wild vegetable collected in winter was washed,heated,salted,preserved and packed.It could become an edible and transportable food.After 6 months,there was not metamorphosing of the product.With experiments,it was shown pH of 3.20,the Vc of 1.18mg/100g and nitrite of 1.13mg/kg.
