Extracting Technique and Antioxidation of Gingerol

YAN Zan-kai(Department of Chemistry,Hanshan Normal College,Chaozhou,Guangdong 521041)  
Gingerol was extracted from ginger by the solution of acetone and the optimum process of extracting gingerol was studied by means of orthogonal test with solvent amount,concentration of acetone and extracting time as factors.The results indicated that the optimum extraction technology was as follows: ginger 100 g,60 % acetone 1 000 ml,refluxing for 3 times and 2 hours per time.In this case,after concentration,gingerol were separated by column chromatography and the extraction rate of gingerol was 0.67 %.On the side,gingerol has evidence antioxidation.
