Study on the Extraction of Anthocyanin of Acer platanoides and its Stability

The experiment in the effect of the different solutions and time on the extraction of the anthocyanin of acer platanoides indicated that there was significant difference in the concentration of it between with 0.1?mol/L HCl and methanol containing 1% HCl or ethanol containing 1% HCl.5~6?h was proper extracting time.Based on the experiments of the anthocyanin's stability to light,temperature and pH,the conclusions can be drawn as follows: the anthocyanin of A.platanoides was sensitive to light and temperature nut it was stable in darkness and low temperature.With pH increasing,the color of extracted anthocyanin changed from red to brown.
