Effect of MAP with Different Sizes of Silicon Gum Film Windows on Stored Agrocybe chaxingu

The gas concentration of O2,ethanol and C2H4 in the modified atmosphere packages and the protein content of Agrocybe chaxingu were assayed.And the effect of MAP with different silicon gum film windows and optimum conditions for storing Agrocybe chaxingu were evaluated.The results showed that while the packages with a 0.9 cm2 silicon gum film window at 3 ℃ in the 5% O2,10% CO2 for storing Agrocybe chaxingu,the concentration of O2 was kept above 1% and the anaerobic respiration did not occurred during storage.And the ethylene did not accumulated so as to avoid the sharp dropping of the protein content of Agrocybe chaxingu.
