PCR-DGGE and its Application in the Research on Fermented Food Microbiological

PCR-DGGE is a kind of molecular biological technique applied widely in microbiology in recent years.In the paper,the principle of DGGE and its application in food microbiology were reviewed.The application of PCR-DGGE in fermented food research was illustrated outstandingly.
