Research Advance in the Enzymatic Browning and its Inhibition Method of Fruit and Vegetable

In this thesis the structure of polyphenol oxidase(PPO),its mechanism of catalytic reaction,and the physical,chemical and biological methods to inhibit enzymatic browning were summarized.
