Review of Research on Meat Quality in Goose

WANG Jian et al(Jiangsu Animal Husbandry and Veterinary College,Taizhou,Jiangsu 225300)  
The relationship between goose meat quality and its evaluation is explained from physico-chemical property,chemical composition and histological research.The current ways to improve meat quality ars analyzed and the direction for future research is put forward.
