Study on Extraction of Tannin from Grape Stems with Ultrasonic Wave

[Objective] The objective of the research was to explore the effective method of extracting tannin from grape stems.[Method] Tannin was obtained from the grape stems by the method of ultrasonic wave.The optimum extraction condition was investigated by single factors and orthogonal analysis experiments.[Result]The optimum extracting condition was the supersonic temperature of 60 ℃,the supersonic power of 60 W,the supersonic time of 20 minutes,the supersonic frequency of 40 kHz.[Conclusion]Extracting tannin by ultrasonic wave method had advantages of shorter extraction time and higher extraction efficiency,which had broad application foreground.
