Analysis on Nutritional Components in Muscle of Siniperca kneri and Siniperca scherzri

[Objective]The aim was to analyze the nutritional components in muscle of Siniperca kneri and Siniperca scherzri.[Method]With Siniperca chuatsi as the control,the protein content,water content,fat content,fatty acid content and the amino acid in the muscle of S.kneri and S.scherzri were analyzed.[Result]The protein content in the muscle of S.kneri and S.scherzri were 18.71% and 18.99%,resp.,and the water content were 76.06% and 76.16%,resp.Though the fat content in muscle was not high,their unsaturated fatty acid content was higher,being above 20%,especially they had abundant EPA and DHA,and the unsaturated fatty acid content was higher than saturated fatty acid content.The protein content was rich and the amino acid content was high in the muscle,which could supply body essential amino acid content.Their delicious amino acid content was very rich in the muscle,too.[Conclusion] S.kneri and S.scherzri had higher nutritive value and huge market potential,and they were mandarin fish species being worth to artificial culture.
