Identification of the Honey Quality with the Technique of Infrared Spectrum

[Objective] The rapid test method of true and false honey was explored. [Method] The pure and false honey of the different brands in market was tested with the method of infrared spectrum.[Results] The same result of infrared spectrum was showed in the true honey products and there were the peak value of infrared spectrum of 1 200-900 cm-1 and 600-400 cm-1 in the honey products mixed with glucose,yellow sugar,sugar and others,which was significantly different with the pure honey products.[Conclusion]The method could be used for honey quality test.
