Study on Preservation of Carambola with Coating Chitosan

[Objective] The aim was to explore the fresh-keeping effect of chitosan on carambola.[Method] At the room temperature,coating the carambola by the chitosan water solution(0.5%,1.0% and 1.5%) was set up as a kind of treatment,based on which,airproofing the carambola by the plastic film and storing in open air as other treatments,and then its weight loss rate,pH value,Vc content and total sugar content were detected.[Result] The fresh-keeping period of carambola was prolonged after carambola being coated with chitosan.The fresh-keeping effect of carambola was further strengthened through airproofed by the plastic film after it was coated.The weight loss rate of carambola airproofed by the plastic film was smaller.The pH value change of carambola airproofed by the plastic film after coating by 1.0% chitosan was little,its total sugar content changed in the smallest range and its fresh-keeping effect was better.The Vc content of carambola was first increased then decreased,then increased again and afterward decreased during the preservation process.[Conclusion] The research provided the theoretical basis for fresh-keeping carambola safely and conveniently.
