Study on the Property of Starch Granule of Red Bean

[Objective] The theoretical basis of the exploitation of the starch from small red bean resource was provided.[Method] The character of the starch granule of red bean,including the particle morphology,the diffraction pattern of X-ray,the dissolubility and turgidity,the content of amylase and the glucan structure,was studied,which were compared those of red kidney bean and scarlet runner bean.[Results] The starch granules of small red bean were mostly oval with irregular in few one;its dissolubility and turgidity were little various with temperature-changing,which overall trend was moderate lifting with temperature-increasing;the diffraction pattern of X-ray showed A-type crystals with the crystallinity of 18.01% and the relative content of amylase was 36.5%.[Conclusion] It was instructive to develop edible bean starch through the research.
