Investigation on the Edible Safety of Market Vegetable

The residue levels of Pb,Cd and Hg in edible part of market vegetable in one food market of Qingpu district of Shanghai City were investigated and the distrbutions of heavy metals in different parts of vegetable were analyzed.The results showed that the contents of Pb,Cd and Hg in Amaranthus mangostanus were the highest of 0.248,0.081 and 0.030 mg/kg respectively;except for edible amaranth,the other vegetable all reached standard of food hygiene.
