Preparation of Edible Mushroom Compound Health Beverage

[Objective]The study was to provide a new way for development and utilization of edible mushroom.[Method]Edible mushroom compound health beverage was prepared with water extracts of Hericium,Ganoderma,Cordyceps,etc.as the main raw material,and functional energy gene D-ribose and other accessories were added.The clarification effect of the dosage of clarifying agents on compound extracts was studied by single factor test.The optimum production formula of beverage was optimized by orthogonal test.[Results]The optimum dosage of clarifying agents was 8%.The effect of factors on the sensory index of edible mushroom compound health beverage in order was Ganoderma extract amountHericium extract amountD-ribose amountCordyceps extract amount.The optimum production formula of the beverage was Hericium water extract of 8%,Cordyceps extract of 6%,D-ribose of 2.5%,Ganoderma extract of 22%.The influence of ultra high temperature short time sterilization on the content of D-ribose in beverage was not significant.[Conclusion]The optimum preparation technology of the edible mushroom compound beverage was established.
