The Preparation and Biological Activity of Hydrolysate of Swine Brain

The purpose of this study was to prepare and to determine the biological activity of hydrolysate of swine brain. It was found that there were 17 kinds of amino acids including 8 kinds of essential amino acids in the hydrolysate of swine brain. It contains 1049.39mg/dL of total amino acid. It was found that the error rate in step through and step down test were significatly lower than that of the control (p0.01). The brain weight of the rats fed with hydrolysate of swine brain for 28 days and the Hb level in female experiment group were higher than that of control group (p0.05). The level of lactic acid in the serum was lower than that of control group after female experiment group had swam 30 min (p0.05). These results indiated that hydrolysate of swine brain was not only high in nutritional value for the brain but also may promote animal memory ability and enhanced constitution.
