Comparison of Amino Acid Content and Composition between Vegetable Sweet Potato Tips and Leaf Vegetables

The amino acid content and the composition of the vegetable sweet potato tips and 14 kinds of leaf vegetables were analyzed.The result indicated:(1) The vegetable sweet potato tips included 18 kinds of amino acids. The total quantity,the human body essential amino acid content and the child essential amino acid content all were the 1st.(2) The vegetable sweet potato tips E/T value was 39.50%,the E/N value was 0.65.(3)The percent of each kind of human essential amino acid content in the vegetable sweet potato tips accounting for the amino acid total quantity and the content of Val,Ile,Leu,Phe+Tyr,Lys,Thr contents accorded with the pattern spectrum revised by FAO/WHO in 1973,only the percent of Met+Cys were moderate lacked.(4) In the vegetable sweet potato tips the fresh taste,the aromatic and sweet taste amino acid contents were the first.
