Study on ACE Inhibitory Activity from Soybean 7S Protein with Directed Enzyme Hydrolyzing

Based on "the searching active peptide and the database of protein simulative hydrolysis",the simulative hydrolysis effect of pepsin,trypsin and alcalase on the soybean 7S protein was studied.Different levels of angiotensin I-converting enzyme(ACE) inhibitory peptide segments were obtained, and ACE inhibitory activity of the different enzyme hydrolysis on the same protein was compared.The results of simulative hydrolysis implied that pepsin plus trypsin could get more peptide segments while the experiment showed that ACE inhibitory activity was stronger with alcalase,showing 73.0965%.
