Optimizing Enzymolysis Conditions in Preparing ACE nhibitory Peptides from Antler Blood

ACE inhibitory activity and antioxidant activity of the product prepared by antler blood of Tianshan wapiti were detected in vitro.The product was prepared by different enzymes under different enzymolysis conditions.The results showed : The product of hydrolysis was 28.0% and ACE inhibitory activity positively correlated with antioxidant activity could achieve 93.55% under optimum conditions.The optimum enzymolysis conditions were the following: hydrolyzed by alcalase,concentration of substrate of 6%,amount of enzyme of 40μl·g-1 protein,pH of 8.0,enzymolysis temperature of 55℃and enzymolysis time of 3 hours.
