Optimization on Production Process of High Acyl Gellan Gum Fermentation

In order to obtain the optimal fermentation medium formula for the high acyl gellan gum production,the optimization research on the medium of shaking flask fermentation of high acyl gellan gum were conducted by using single factor analysis and orthogonal test method.The results showed that,optimum fermentation medium formula were as follows,the proportion of saccharose was 2.75%,fish peptone was 0.25%,KH2PO4 was 0.10%,and CaCO3 was 0.12%.The results of 50 L canist experiment showed that,fermentation liquor viscosity was 20 000 cp,pure gum productive rate reached 1.55%.The results could provide references for improving the gum-yielding rate of high acyl gellan gum.
