Study on Categories and Physicochemical Quality of Pear Peel Pigment

Categories and physicochemical quality of pear peel pigment was studied taking ‘Bali’,‘Hongbali’,‘Qieli’ and ‘Hongqieli’ pear as materials.The results showed that;Pear peel pigment was water-soluble.It was sensitive to sunlight,preservation temperature and PH of extracting liquid.The pigment content was stable under the preservation condition of low temperature,evading light and neutral pH.Through the specific reagent reaction and the ultraviolet spectral analysis,it was indicated that pear peel pigment belonged to flavanone.It contained neither orange alkone nor C5-OH,it contained cyanine glucoside,flavonol,dihydro flavanone,flavonol-3-0-indican and so on,and it might contain isoflavanone,3′,4′,5′——triatomic and so on.
