In order to study the changes of the concentration of carbohydrate and the activities of relative enzemys of peach, water stress treatment were imposed on potted two-year old"Qinfeng" peach ( Prunus persica L.cv.Qinfeng)in early spring. Results indicated that the sorbitol and glucose are the main substance doing osmotic adjustment. The concentration of sucrose and starch in peach leaves decreased significantly while that of sorbitol, glucose and fructose increased with the increasing extent of water stress. The activities of aldose 6 phosphate reductase(A6PR),sorbitol dehydrogenase(SDH),sucrose phosphate synthase(SPS),neutral invertase(NI)and amylase in peach leaves increased also, but that of acid invertase(AI)is stable.
