Study on physiological characterisitics of two strains of lactic acid bacteria

The biological properties of two strains of lactic acid bacteria were studied.The results showed that the optimal temperature for the growth of St and Lb were 40~45 ℃ and 30 ℃,respectively;the capability of lactic acid production and adaptability to high temperature of Lb were better than that of St.
