Analysis of Nutritional Components and Its Nutrtion Value of Silphium perfoliatum L

Silphium perfoliatum L.has cultivated in every provinces of China.Its content of protein is about 17.83%~23.6%DW.There are ev-ery kinds of essential amino in its protein.The rate of restrictive amino i.e.Lysine to protein reachs5.28%.This may make up the insufficiency of Lysine in the food made of grain.The conternt of calcium in the Silphium perfoliatum L.is about 2.5%~3.22%DW,the phosphorus is about 0.28%~0.6%DW,the potassium is about 2%~2.8%DW.There are4.25~4.26mg /kgDW carotene,52.3~52.8mg /kgDW vitamin C,65mg /kgDW vitamin E.Eevery kinds of the components in Silphium perfoliatum L.has its important nutritional value.The taste of the products made of Silphium perfoliatum L.is acceptable.It is valuable to use Silphium perfoliatum L.to research and develop food.
