Effects of Temperature and Relative Humidity of Agaricus Bisporus Storage

The effects of temperature and relative humidity of the agaricus bisporus on storage were studied by investigation the changing of agaricus bisporus' weight loss, respiratory rate and browning degree under the variety condition of different storage condition circumstance. The experiment shows that lower temperature has an effect to decrease weight loss, respiratory rate and browning degree, but higher relative humidity could decrease weight loss and increase browning degree.
