Research Progress of Preservation Technologies and Their Mechanisms of Fruits

Advances in fresh-keeping methods of fruits were previewed in this paper including physical methods,chemical methods,biological methods and fresh-keeping mechanism.Advantages and disadvantages of different fresh-keeping methods were also analyzed.The fresh-keeping methods of fruits and security monitoring system according to the condition of our country were prospected.
