Research on the Technology of Low Sugar Compound Jam of Blueberry and Carrot

With low methoxy pectin, xanthan gum and polydextrose as compound thickening agents, the formula of the thickening agent was optimized by single factor and orthogonal tests. Blueberry and carrot were used as raw materials to prepare low sugar compound jam, the optimal jam formula was confirmed by response surface experimental design. The results showed that the optimum thickening agent formula was:low methoxy pectin 0.5%, xanthan gum0.2%, and polydextrose 4%. The optimal formula of the compound jam was as follows:proportion of blueberry to carrot 3.2∶1(m/m), white sugar addition 24%, citric acid addition 0.2%. The compound jam produced had natural luster, delicate taste, unique flavor, and high nutritional value and health care function.
