Experimental Study on Fresh-keeping Packaging of Lotus Root Slices Based on Ozone

The inhibiting mechanism of ozone to the enzymatic browning of lotus root was analyzed.Fresh-keeping packaging of lotus roots slices based on ozone was studied with experiments.The results showed that different packaging film bags,different ozone content,and different storage temperature visibly influence on the enzymatic browning,weightlessness,and sensory index of lotus roots slices;if the PA / PE film is used as packaging material,with storage temperature of 5℃,it can restrain the breathing intensity and enzymatic browning of lotus roots slices effectively.Their storage period can be prolonged to 20 day.
