Effects of Vanillin on Antimicrobial Activity of Soy Protein Isolated Film

Soy protein isolate(SPI) films were prepared with vanillin and their antimicrobial activity was studied.The result indicated that vanillin has certain antimicrobial effect against escherichia coli and staphylococcus aureus,MICs50 were 0.15% and 0.21%.The test of antimicrobial rate and zones of inhibition suggested that antimicrobial activity of vanilla was expressed in SPI based film,the MICs50 were 0.25% and 0.30%,the activity was lower than vanilla itself.
