Evaluation of Nutritional Components of Chinemys reevesii Muscle in Ponds

The biochemical composition of chinemys reevesii meat was reported .The contents of moisture,carbohydrate and ash of the muscle were 80.24%,0.66% and 0.95%,respectively.The contents of protein were 16.64%,the ratios of essential amino acids and direcious amino acids to total amino acids were 49.16% and 43.39%,the protein aws rich in Glu,the first limiting amino acid being Ile and the score of amino acid was 82.63.The contents of fat were 1.51%,the ratio of unsaturated fatty acids to total fatty acids was 76.83%,and the ratios of C_(18∶1),C_(16∶0) and C_(22∶6) to total fatty acids were 39.32%,16.15% and 9.50%,respectively.
