Fatty Acid Levels in 7 Economic Shellfishes

Fat and fatty acid levels were determined in gonads in 7 economic shellfishes to illustrate the gonadal development. The contents of the fat was 25.48%, 22.32%, 21.27%, 19.89%, 15.75%, 16.79%, and 14.88% in Sinonovacula constricta, Patinopecten yesoensis, Meretrix meretrix, Tegillarca granosa, Mytilus edulis, Haliotis diversicolor and Cyclina sinensis, respecitively. There were higher fat and fatty acid contents in the female gonads than in the male ones. The contents of unsaturated fatty acids were higher than the saturated fatty acids. The content of the unsaturated fatty acids was 67.23%, 67.19%, 64.27% , 59.74%, 59.40%, and57.51% in Mytilus edulis, Meretrix meretrix, Tegillarca granosa, Patinopecten yesoensis, Sinonovacula constricta, and Cyclina sinensis, respectively.
