Comparative Nutrition Components in Five Cultured Molluscs in Coastal South China

Main nutritional components including moisture,crude protein,ether extract,crude ash,amino acid,fatty acid and minerals were determined for five cultured molluscs: Babylonia aerolata(two types for the big and the small),Crassostrea rivularis(Gould),Paphia undulate(Born),Hemifusus tuba(Gmelin) and Haliotis diversicolor in coastal south China.The results showed that the crude protein contents of little standard B.aerolata were higher than the others.The contents of amino acid and essential amino acid for human were at highest levels in soft parts of Paphia undulate. The levels of flavour amino acid was the highest in soft bodies of H.tuba.There were the maximal branched-chain and aromatic amino acid ratio(BCAA/AAA) and polyunsaturated fatty acid contents in soft bodies of B.aerolata.Major element contents were not significantly different in soft bodies of the five cultured molluscs,however,the differences in trace element contents were significant.
