The Extraction of and Scavenging Hydroxyl Free Radicals by Scallop Viscus Polysaccharide

The extracting conditions and effects of scavenging hydroxyl free radical of scallop(Patinopectem yessoensis) viscus polysaccharide were studied.The optimal extracting condition was determined through orthogonal experiments with 50 ℃ of extraction temperature,pH 8.0,0.25% of enzyme concentration,1∶45 of substrate ratio for 2.5 h.The polysaccharide had effect on scavenging hydroxyl free radicals.The results showed that scavenging ability was up to 84.75% at 6.5 mg/ml of the polysaccharides.
