Structure performance and applications of xanthan gum

The structure and performance of xanthan gum were briefed and the applications of xanthan gum in chemical industry and food industry were summarized while focused on the uses in household and personal chemical products as suspending agent,emulsifier,stabilizing agent and/or thickening agent.The excellent performance of xanthan gum,such as dispersing power,emulsifying power,rheological property,thermal stability as well as stability to acid and alkali were presented.The problems about the uses of xanthan gum in China and the future trend were discussed.
