Research Development of Structure Characterization and Application of Protein Gels

Protein gels get more and more attention as a polymer materials with abundant sources and biodegradability. On the basis of the mechanisms of the formation of protein gels, the characterization methods used in researching the structure of protein gels, such as mechanical properties, thermal analysis, electrophoresis, spectroscopic measurement and microscope are introduced, and the applications in absorbent gels, intelligent hydrogels and tissue engineering of protein gels are reviewed in this article. The problems and the trends of research of protein gels are pointed out.
