Study on the Effect of Keeping Strawberry Fresh Using Chitosan From Antheraea pernyi Puparium

The chitosan extracted from the Antheraea pernyi puparaium is a comprehensive utilization product with great value.The effect of different concentration of chitosan coating on the freshness keeping of strawberry was investigated.The results showed that coating 1.5% of chitosan has the best inhibition effect on strawberry respiration.The contents of soluble sugar,vitamin C and MDA in strawberry treated with 1.5% chitosan are closest to that in the fresh strawberry.The fresh strawberry coated with 1.5% chitosan can be preserved for more than 4 days under the normal temperature.
