Study on the composition of monosaccharide and the structure in Oolong tea-polysaccharide

College of material engineering, Fujian Agriculture and Forestry University, Fuzhou, Fujian 350002.)  
The tea-polysaccharide was extracted from the Oolong tea, and then following processing were adopted, alcohol-sedimentation, dialysis and protein isolating. The results showed that Oolong tea-polysaccharide is compounded by Glucose, Arabinose and Galactose. According to its IR spectrum and Galactose losing in protein-isolating, the Oolong tea-polysaccharide is a compound of protein and polysaccharide.
