Dynamics of Main Enzymes during the Manufacturing of Fuzhuan Brick Tea

Dynamics of the isoenzymes of polyphenol oxidase an tivities of cel-lulase and pectinase during the manufacturing of Fuzhuan Brick Tea,andthe effect of inducers on the activities of the three kinds of enzymes duringthe fungus growing were investigated with the technique of enzyme analy-sis.Results showed that polyphenol oxidase,cellulase and pectinase existedin Fuzhuan Brick Tea,and that they changed with regularity duringgrowing.After inducers being added,the activities of the three enzymesthe fungus were enhanced in different degree during the fungus growing,and,moreover,the isozymes bands and the activity of polyphenol oxidasechanged,resulting in 3-day earlier occurring of the related isozymes thanthe orthodox treatment,which would play an active role in improving thequality of Fuzhuan Brick Tea.
