Pathway of Improving the Quality of Fuzhuan Brick Tea——Development and Application of Inducers

According to the principle of quality formation of Fuzhuan Brick Tea,the inducers were applied in the fungus-growing process of Fuzhuan BrickTea.It was found that the inducers could accelerate fungus growth andreproduction,the formation of“golden flower”and the transformation ofbiochemical constituents in the tea,resulting in a 9-day fungus growingprocess,a 3-day shorter fungus growing process than the orthodox fungusgrowing process.
