Review on Enzyme Study in the Processing of Fuzhuan Tea

Fuzhuan Tea is a microbial fermented tea.Extracellular enzymes had close relation with some key quality factors of Fuzhuan Tea.The main enzymes,which were produced during the processing of Fuzhuan Tea,were briefly introduced.The relationship between extracellular enzyme activity and microorganism population change is analyzed,so as to provide the theoretical foundation for the principle of quality formation of FuZhuan Tea.
