Research advance of the freeze-drying technology of lactic acid bacteria

Freeze-drying is a key technology during the production of starter culture of lactic acid bacteria.This article introduces the factors which influence the effect of freeze-drying,the damage from freeze-drying on lactic acid bacteria,and some protective methods for freeze-drying.
