Study on hydrolysis of soybean isoflavone glucosides by β-glucosidases from Aspergillus niger

The production of β-glucosidases from Aspergillus niger was studied. The thermostability of β-glucosidase from Aspergillus niger was high. When the enzyme was incubated at 50 ℃ for 2 h, the remaining activity was 92% of the original level. The optimal conditions of β-glucosidase from Aspergillus niger to hydr-olyze isoflavones glycoside were established. Comparing with acid and β-glucosidase from almond, β-glucosidase from Aspergillus niger showed the highest hydrolysis efficiency.
