PHYSIOLOGICAL AND BIO-CHEMICAL CHANGES OF PINGGUO PEAR BEFORE TAKEN OFF

This experiment studied. The result showed that before Pingguo pear taken off no ethylent produced; respiration intensity presented falling tendency, only rising again then falling in the later period. During its maturity before taken off hardness continued falling, soluble solid and vitamin C increasing. Starch earlier increased then fell; fructose increased mainly. Content of citric acid continued insreasing, malic acid falling.
