Genetic and Environmental Variation of β-amylase in Barley and its relationship to malt quality

WANG Jun-mei, YANG Jiang-ming, SHEN Qiu-quan& ZHU Jin-huan (The Institute of Crop and Nuclear Technology Utilization, Zhejiang Acade my of Agricultural Sciences, Hangzhou, 310021)  
amylase is a major trait of malt barley. It is clos ely related to m alt diastatic power. β-amylase in barley is not only controlled by genetic fact ors, but also controlled by environmental and cultivated factors. This paper als o reviewed the characteristics of β-amylase and its genetic improvement by bree ding.
