Cellulose-assisted Extraction and Antioxidant Activity of Onion Polysaccharides

The onion was used as raw material,the optimum conditions of polysaccharides extraction from onion with cellulase was investigated by response surface methodology and identified temperature 53℃,reaction time 100 min,pH 5.0,enzyme 0.3%,solid-liquid ratio 1∶40(W/V).Under these conditions the polysaccharides extraction rate was 9.39%,which was 4.06% higher than that extracting with water.Antioxidant activity of onion polysaccharides was also studied.The onion polysaccharides has strong scavenging effects on 1,1-diphenyl-2-picrylhydrazyl radicals and hydroxyl radicals.Moreover,onion polysaccharides have certain reductive capability.The onion polysaccharides showed high anti-oxidantive activity in vitro,which is a kind of valuable product of biological activity.
