Nutritional Evaluation and Amino Acid Balance on Swine Plasma Protein

Swine plasma protein (SPP) prepared by means of salting out had been subjected to amino acid analysis and rat growing test according to AOAC for biological evaluation. The amount of essentaial amino acids of SPP was close to or sarpass-ed those of whole egg protein, except methionine was lower in SPP. The body weight gain in weaned rats was lower in SPP feeding group, but much higher in the group of SPP enriched by methionine (SPP-Met) when compared with casein feeding group. The protein efficiency ratio (PER) of SPP-Met and casein group were 3.33±0.15 and 2.65±0.16 respectively. The chemical score (79) and the essential amino acid index (91) of SPP-Met were superior to those of casein. The results show that SPP is a kind of protein with good quality and its biological value can be increased significantly by adding methionine.
